Brake fluid is hygroscopic although this does take time, the oil will form moisture on the top, and it will only make it worse if you start it and run it for a short period, as condensation will form in the sump due to the difference in temp between in and out oil is the blood of the engine, dont skimp on this

very easy job, you shouldn't have any excess fluid unless its been topped up recently, use something wooden to push the pistons back and as alex says dont forget to copper grease the rear of the pads took me an hr to do mine all round With Needle Nose Pliers remove pins and shims that hold pads in place. push the pads against the piston to give you some slack and pull the pad out

a lot of the answers are down to budget and personal opinion, i like focals and genesis, they go well together, i would definitely use dynamat extreme, a lot lighter than the ordinary stuff and you do need a lot on the zed
