Welcome Ben. You're in the right place. Basically you can either get an import for 9k (nothing wrong with them, they're just cheaper), or a higher mileage UK model. With the UK you have 2 choices of spec - GT or non-GT. The GT includes leather seats, sat-nav, and a bose stereo, and thats about it. So pick which of those you want and then you're just left with a colour to choose! (silver is the fastest )

Never heard of a canbus wire, but if its the vss wire (vehicle speed sense wire) then one can be found in the back of the AC control unit (white box at the bottom of the center console). See guide here: viewtopic.php?f=35&t=18962&hilit=head+display

Avon do the right size, and kumho too. Dont go to a 45 though, the wheels will look tiny.

They wont affect handling at all. Take the traders advice on 25mm or 20mm... If you are keeping stock suspension you should be okay with 25mm on the rear without any rubbing but if you have any plans for dropping it, stick with 20mm. And the spacers you want have integrated bolts, so you dont need anything extra. Takes about 1hr to fit all 4.
