The feel of the clutch on my 05 DE has suddenly changed, would I be right in thinking its likely to be the Slave Cylinder?

I've not had any slip issues and the change was sudden. Gears are still changing ok with no fluid loss. 

My car is stock by the way and I believe its on the original clutch at 43000 miles.  

Which Slave Cylinder should I replace it with, OEM or upgrade?

Changed how? Bad slave cylinder usually causes the clutch to not engage/disengage properly or stops the pedal from returning all the way when you release your foot.

The full travel of the clutch pedal did have a consistent feel for its full travel,  It now feels less firm at the top of the stroke and the bite seems lower.

Ah, yeah sounds like one of the seals might be on its way out then.

 

Seeing as the oem slave cylinder is a known weak point I'd upgrade to a Stoptech one and swap the line out for a braided one personally.
