Cold air problem, not the usual one!

I've searched and all I can find is people with constant cold air problems.

When the car is up to temperature and I'm driving along at say 30mph - cold air... bump the speed up and it's hot.

On idle it's cold, increase the revs it goes hot.

I've checked coolant levels and they're fine.

I've done the bleed screw, a slight amount of air came out but not a great deal.

I've made sure the climate control auto switches aren't on, but wouldn't make sense for it to go hot and cold from idle to increase revs.

I'm now out of ideas... Other than maybe a sticky thermostat or a heater matrix problem?
