oem exhaust ....stamped with date?

I don't actually know but I'd say that the date was the date the exhaust was made not the year of vehicle it was made for. Usually car parts to fit specific year of vehicle would be identified by part number.

Does the seller know if the exhaust had been replaced?

 

It's fairly common for the Z exhaust the fail at the flange after five years so a 2003 car could possibly have a 2008 exhaust fitted.
