could something like this be mounted in the cubby?

Its a 7inch touch screen thats runs through USB, could it fit snuggly in the cubby and then be linked up to a small cheap computer for movies, sat nav etc?

It would take you to check dimensions etc but there are a lot of aftermarket screens that will certainly fit. I think there a good few on here with screens in the cubby.

WORD OF WARNING

 

I did this...........but the usb monitor adds over 1:30 minute of boot up time and i had problems with it losing its touch after a resume.

 

In theory it works real well but in real life it isn't suitable for a primary car monitor.
