I plan to do a stealth install in the ashtray but I have it temporarily mounted to the left of the instrument cluster with the cable jammed in the gap where the steering column moves up and down. If you know what I mean

If you are talking about backing up jailbreak apps then grab an app from cydia called aptbackup.

It takes a listing of all your jailbreak apps and stores it with your regular backup in itunes. Then after you upgrade just reinstall aptbackup, hit the restore button and all is as it was before.
